Edamame Broccoli Slaw with Honey Ginger and Sesame Vinaigrette


1 14 oz. bag of frozen shelled edamame,

(thawed)

1 red bell pepper, diced

2 scallions, sliced on an angle

1 12 oz. bag of broccoli slaw

2 tbsp reduced sodium soy sauce

In a large bowl, toss together edamame, red bell pepper, scallions and broccoli slaw. In a jar with a tight fitting lid, pour Chipotle Olive Oil, Honey Ginger Balsamic, sesame oil and soy sauce. Replace lid and shake well until the dressing is well blended. Pour dressing over vegetables and toss to coat.

You can get creative with this slaw and add whatever you would like as a garnish. We suggest, chopped unsalted peanuts, fresh cilantro, shredded bok choy, bean sprouts or snow peas. Top it with shrimp or chicken for a meal.
