4 tbsp Truffle Olive Oil
4 tbsp all-purpose flour
4 cups milk
1/2 tsp sea salt
1/4 tsp fresh cracked pepper
2 (8-ounce) bags of sharp cheddar cheese, shredded 1 (16-ounce) package elbow macaroni, cooked al dente
Preheat oven to 400°F. In a large skillet or Dutch oven over medium-low heat, add the Truffle Olive Oil and whisk in flour until smooth. Cook, stirring constantly, for one minute. Gradually whisk in milk, and cook, whisking constantly, for 5 minutes or until thickened. Whisk in salt, pepper, and shredded cheese, reserving 3/4 cup. Stir in pasta and mix well. Spoon pasta mixture into a lightly greased 2-quart baking dish; top with remaining cheese. Bake at 400° for 20 minutes or until golden and bubbly. Drizzle with additional Truffle Olive Oil before serving.
